Supervising Food Safety at Sea

This qualification is designed for those learners wishing to gain a nationally recognised qualification in food safety at a supervisory level. It is aimed at supervisors, team leaders and line managers working in the food and drink industry on board a ship.

Learners gaining this qualification will know, and be able to apply, the knowledge relating to the supervisor’s role at all stages of food production.

The HABC Level 3 Award in Supervising Food Safety at Sea  is accredited and has been developed to protect customers, brand reputation and profits.

Entry Requirements  

  • There are no prerequisites for this qualification, although it is recommended that learners already hold a Level 2 Award in Food Safety at Sea

  • This qualification is approved for delivery to learners aged 16+.

Course Content

  • Importance of implementing food safety management procedures when at sea

  • Supervisory role to comply with food safety legislation and procedures

  • Supervisor’s role in implementing and maintaining high standards of personal hygiene within an on-board catering operation

  • Identifying and controlling the risk of contamination and cross-contamination

  • Temperature control critical control points, critical limits

  • Monitoring and corrective actions

  • Verifying and documenting food safety controls and procedures at sea

  • Requirements for induction and ongoing training of on-board personnel to ensure competency


The exam is conducted via Highfield E-assessment and is remotely invigilated online at your home or your workplace.​

The exam is carried out at a set time and dates convenient to you after you have completed the training, please allow up to 5 working days for Highfield to set up the exam for you, we can arrange the exam date prior to your completion of the training if you have a specific date/time in mind



You will find out if you have passed or failed immediately and will receive an e-certificate shortly after completion which has the same accreditation as a hard copy certificate.
