Managing Food Safety in Catering

The objective of this qualification is to provide managers and potential managers employed in a catering or retail business, the knowledge to manage the business in a way which ensures the safety of the food prepared and/or sold.


This is also suitable for food safety trainers responsible for training food handlers, supervisors and managers. The content covers the subject of food hygiene at a suitable depth to ensure learners have a thorough knowledge of hazards and controls; its focus is on the importance of developing, implementing and monitoring food safety procedures.

This qualification has one mandatory unit with five learning outcomes: International Principles of Food Safety Management for Catering

Entry Requirements

  • There are no prerequisites for this qualification, although it is recommended that learners already hold a Level 3 Food Safety in Catering

  • This qualification is approved for delivery to learners aged 16+.

Course Duration  : 40 Hours (5 days)   


Guidance on Assessment

  • Assessment Method : Multiple Choice Question & Written Exam

  • Exam Mode : Online

  • This qualification is assessed through a two-part examination.

    • Part one is a 30-question multiple-choice examination.

    • Part two is a 15 short written questions (all must be completed)

  • Total Marks : 30+70= 100

  • Pass mark : 50/100 (50%)

  • Merit : 60/100 (60%)

  • Distinction : 70/100 (70%)

  • Duration : 150 Minutes (2.5 Hours)

The exam is conducted via Highfield E-assessment and is remotely invigilated online at your home or your workplace.​

The exam is carried out at a set time and dates convenient to you after you have completed the training, please allow up to 5 working days for Highfield to set up the exam for you, we can arrange the exam date prior to your completion of the training if you have a specific date/time in mind




You will find out if you have passed or failed immediately and will receive an e-certificate shortly after completion which has the same accreditation as a hard copy certificate.
